Aunt Billie's Hush Puppies
Hope everyone is having a joyous Sunday!
I am starting to fry some catfish, hushpuppies and french fries. And I thought I'd share my Aunt Billie's Hush Puppy recipe with you. They are light and fluffy and GREAT!
1 Cup Corn Meal (yellow)
1 Cup Allpurpose Flour
2 eggs
1/3 cup sugar
1/2 teasp. salt
1 Tablesp. Baking Powder
1 Cup Buttermilk
1 bunch green onion, chopped small
Mix. Batter will seem thin. Drop by teaspoonfuls into hot, deep fat and fry until golden brown. Keep it hot.....they should fry quickly. Test one by breaking in half & make sure it is done in center. If not lower temp. slightly.
