#AtoZChallenge - Perspectives: Vegetables

I don't want to give the wrong impression, I am not a vegetarian by a long shot and have no interest in being one.  I enjoy a wide variety of meats cooked a lot of ways.  I'm simply saying that I find that with the right vegetables, in the right combination and a few pieces of fresh fried hotwater cornbread, I can happily make a meal! 

Take for instance, some squash and onion simmered down with salt &
pepper or okra and tomatoes simmered down with a touch of cumin and chili powder.  Have a few peas on the side.  Wonderful!

What about you?  Are you like my hubby and insist there must be a meat with every meal?  Can you be happy with just vegetables?  Have you ever had hotwater cornbread?  What is one of your favorite vegetable dishes?

  1. My husband wants to make sure there are vegetables with every meal so our menus begin with the veggies.

  2. Well, I probably don't count as a rule, since I'm Italian and Italian cuisine relies a lot on vegetables. We have a number of traditional dishes wchich are in fact vegetarian.
    Personally, I can go without veggies just for a few days, then I start hitching. And no, I don't necessarily need meat in all my meals. In fact, often there is no meat in my meals ;-)

  3. I relish my meat occasionally, but overall, its the veggies that I savor most. There's so much more variety and color to it. I've never heard of hot water cornbread. Wonder how it is.

  4. What exactly is hot water cornbread? I've had cornbread before. (I think it's a requirement in New England to have eaten it at least once.)

  5. We usually have meat, poultry, fish or cheese at our main meal for the day. Not for lunch time. V is for the Virtue of Value as you Build a Better Blog. #AtoZchallenge.

    1. I think my family could make a meal off of fresh ears of sweet corn as well! I'll be posting the cornbread recipe soon.

  8. I live in the South, where mac & cheese is considered a vegetable. Under that paradigm, yes, I like vegetables.

Growing up in a Midwest "meat and potatoes" culture, I still love meat with my supper, but I can also enjoy a meal of roasted or steamed veggies, especially squash, sweet potatoes, or asparagus. Devilled eggs on the side, even better! :-) Papa Bear would probably be disappointed if supper didn't include some kind of meat, unless it was a giant bowl of beans or mac n' cheese, his favorites! I'll be eagerly looking forward to that cornbread recipe, not something I am familiar with!

  11. I grew up eating meat with most meals and after I married we did the same. John doesn't "get it". My mama was from Oklahoma and she made hot water cornbread often. It was so good but I never made it and I don't know why. Anxious to see your recipe, maybe I'll cook some.

  12. I am not a vegetarian myself,but I try to balance my diet with minimalist animal product. My favorite vegetable is broccoli I find it is not very much of the popular opinion. Your picture of meal looks delicious!

  13. Big meat eaters here! Especially as we're trying to re-dedicate ourselves to a very low carb diet way of life, we eat meat and salad, mostly. If I'm honest, I really don't miss vegetables much at all, lol. :D
